Clean,wash and drain the mangel.
Cutthe stalks and keep them separate.
Cutthe leaves into smaller pieces.
Puta pot of water to boil and first boil the stalks until they soften and then theleaves. Cool and drain very well.
Mashthe garlic with a little salt and dissolve with the lemon juice.
Putthe yogurt, the garlic with the juice, the olive oil and the sumac in a deepdish.
Mixwell and add the celery.
Stiragain to blend well with the rest of the mixture.
Finally,sprinkle with black sesame seeds on top
